  • 1/2 cup (113g) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (60g) brown sugar
  • 2 teaspoons ground cinnamon (for filling)
  • 1/4 cup (60ml) milk
  • 1 cup (120g) powdered sugar
  • 2-3 teaspoons milk or lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together butter and granulated sugar until creamy. Add egg and vanilla, mix well.
  3. Gradually add flour, cinnamon, salt, and mix until combined to form a dough.
  4. On a floured surface, roll out dough into a rectangle about 1/4 inch thick.
  5. Mix brown sugar and additional cinnamon for the filling. Spread evenly over the dough.
  6. Roll up the dough tightly from the long edge to form a log. Slice into 12 even rounds.
  7. Place slices on prepared baking sheet. Bake for 12-15 minutes until golden brown.
  8. Mix powdered sugar with milk or lemon juice to make a glaze. Drizzle over warm cookies.
