- 4 large russet potatoes, sliced thin
- 2 large onions, thinly sliced
- 2 cups shredded Gruyere or cheddar cheese
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375F (190C). Lightly grease a baking dish.
- In a skillet, heat olive oil and butter over medium heat. Add sliced onions, thyme, salt, and pepper. Cook until caramelized, about 15-20 minutes.
- Layer half of the sliced potatoes in the baking dish. Season with salt and pepper.
- Spread half of the caramelized onions over the potatoes. Sprinkle half of the cheese over the onions.
- Repeat layers with remaining potatoes, onions, and cheese.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
Notes
- Ensure potatoes are sliced thin for even cooking.
- For a gluten-free version, omit breadcrumbs if used.
- Garnish with fresh parsley before serving.
