Ingredients

  • 4 large russet potatoes, sliced thin
  • 2 large onions, thinly sliced
  • 2 cups shredded Gruyere or cheddar cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375F (190C). Lightly grease a baking dish.
  2. In a skillet, heat olive oil and butter over medium heat. Add sliced onions, thyme, salt, and pepper. Cook until caramelized, about 15-20 minutes.
  3. Layer half of the sliced potatoes in the baking dish. Season with salt and pepper.
  4. Spread half of the caramelized onions over the potatoes. Sprinkle half of the cheese over the onions.
  5. Repeat layers with remaining potatoes, onions, and cheese.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
