Instructions
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat softened butter and sugar until creamy.
- Add egg and vanilla extract, mixing well.
- Gradually incorporate dry ingredients into wet mixture until dough forms. Chill for 30 minutes.
- Combine brown sugar and cinnamon in a small bowl.
- Roll out the chilled dough on a floured surface into a ¼ inch thick rectangle.
- Spread cinnamon sugar mixture evenly over the dough and press lightly.
- Gently roll the dough into a tight log from one end.
- Slice the log into 1-inch thick rounds and place on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 10-12 minutes until golden-brown.
- Remove from oven, cool on wire rack, and optionally drizzle with icing or glaze.
Notes
- Chill the dough for easier handling and cleaner slices.
- Use room temperature butter for best creaming results.
- For an extra cinnamon kick, sprinkle additional cinnamon on top before baking.
- Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
- You can substitute gluten-free flour if needed.
