- 4 boneless, skinless chicken breasts
- 1 cup Italian breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- In a shallow bowl, combine Italian breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and pepper.
- Whisk eggs in another bowl until well combined.
- Dip each chicken breast into the egg mixture, then dredge in the breadcrumb mixture, pressing gently.
- Place the breaded chicken breasts on the prepared baking dish. Drizzle or spray with olive oil.
- Bake for 20-25 minutes until cooked through (internal temperature 165°F/74°C).
- Remove from oven, spoon marinara sauce over each piece, sprinkle with mozzarella cheese.
- Return to the oven and bake 8-10 minutes until cheese melts and bubbly. Garnish with basil if desired.
Notes
- For gluten-free version, substitute gluten-free breadcrumbs or crushed almond flour.
- Ensure chicken is cooked to an internal temperature of 165°F (74°C).
- You can add red pepper flakes or chopped olives for extra flavor.
- Reheat by baking at 350°F (175°C) for 15 minutes to keep the crispiness.
