Ingredients
Scale
- 2 cups of cooked and cooled mashed potatoes
- 1 cup of shredded cheddar cheese
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh chives or green onions
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 large egg
- 1 cup of breadcrumbs (panko or regular)
- Cooking spray or aerosol oil for air frying
Instructions
- In a large bowl, combine the cooked mashed potatoes, shredded cheddar cheese, Parmesan cheese, chopped chives, garlic powder, salt, and pepper. Mix well.
- Add the egg and stir until all ingredients are thoroughly incorporated.
- Shape the mixture into small balls or patties, approximately the size of a golf ball or mini cupcake.
- Roll each shaped puff in the breadcrumbs until evenly coated.
- Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray.
- Arrange the potato puffs in a single layer in the basket, leaving space between each.
- Spray the tops lightly with cooking spray for added crunch.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Notes
- Chill mashed potatoes before shaping for better stability.
- Avoid overcrowding the air fryer basket; cook in batches if necessary.
- Adjust cooking time based on the size of the puffs—larger puffs may need extra minutes.
- Use panko breadcrumbs for extra crispiness.
- Add-ins like bacon bits, jalapeños, or herbs can enhance flavor.
